Burgers & Fries
This was dinner from last night and my take on a healthy, paleo version of burgers and fries.  For the burgers, I followed this recipe but mixed it up just a tad.  Instead of butter lettuce, I served the burgers on top of baby spinach with light sprinkle of reduced fat feta cheese.  Spicy mustard and sriracha sauce on the tip top.
For the fries, I took 2 sweet potatoes and sliced them up.  In a bowl, I mixed the slices with 1/4 cup of extra virgin olive oil, 2 tsp of ground black pepper, and a very, very light touch of salt.  I spread them out on a cooking pan and topped them with oregano and tequila lime seasoning.  Baked for 28 minutes on 425.

Colorado Chicken

This is a paleo meal that I made for the family tonight. It’s 99% paleo actually as I put reduced fat feta cheese on the salad. But this is awesome. Best part is that we cut up some of the chicken for our girls (served them green beans and rice) which was great as I didn’t have to make totally different meals for everyone.

Total prep time was about 30 minutes. Good meal and will be one I make again.

How do you know you have turned a corner? When you find yourself mixing veggies rather than Hamburger Helper.

Browned some onions in olive oil then mixed in asparagus and mushrooms. A bit of garlic and low sodium soy sauce for flavor and the veggies were perfect. Seasoned salmon and Sriracha because if you don’t put Sriracha on your salmon I’ll punch you in the esophagus.

It’s tough to eat healthy, trust me, I know. When I get off work, I pick up our daughters and head home. I can’t wait for my wife to get home to cook dinner, so that’s on me. She gets home a little too late. I cook for the girls as well as my own meal which is usually different. After work, the last thing I want to do is dishes and cook. Something quick from a drive thru would be so much easier. And they have toys right?

But I can’t give in to that. I want my girls to see me cook and to know that is not just a choice but my preference.  I’d rather have what I ate tonight over any garbage that could be handed to me through a drive thru window.

Plus I got bonus points tonight because I had all of our meals ready right as the wifey walked in the door from work. I love it when a plan comes together.
